SWIFT
— Culinary Storytelling in the Wild
SWIFT is an experiential outdoor culinary project founded by Pablo and Bucky, two friends who met in the mountains of Montana and found common ground in fire, food, and purpose.
Together, they build gatherings that merge craft, design, and the natural world. Each event is elemental: fire-cooked meals, local ingredients, and honest conversation shared under the open sky. It’s not catering. It’s not fine dining. It’s a return to something simpler, where a shared meal becomes a spark for connection.
MEET THE FOUNDERS
Pablo A. Garcia & Bucky Jaquess, Cofounders of SWIFT
SWIFT was born from a friendship forged in the mountains of Montana—a shared love of the outdoors, open fire, and the kind of meals that slow time down.
Bucky brings a lifetime shaped by food and the land. A chef and consultant with roots in Texas ranch country, he carries an ease around fire and people alike. His gift is in creating spaces that feel both intentional and effortless—places where connection naturally happens.
Pablo trained as a chef in New York before turning his work toward photography, storytelling, and retreats. He’s most alive outdoors, tending the fire, guiding the cook, and shaping the creative thread that runs through every SWIFT experience.
Together, they build elemental gatherings; part meal, part memory. Where food, fire, and friendship come together in their simplest, most human form.

Salt
Essence
Preservation, flavor, foundation. It reminds us to keep things honest.
Wood
Medium
Fuel and tool, shaping the smoke and the space around it.
Intention
Why
The quiet thread that turns a meal into meaning.
Fire
Heart
Transformation. Danger and warmth. Creation and renewal.
Terrain
Context
The place that holds us. Farms, forests, coastlines—each a stage for gathering.
THE EXPERIENCE
Meals That Remember What Food Can Be
Each SWIFT event is designed to bring people closer—to nature, to one another, to the moment at hand.
Fire and Craftsmanship: Local, seasonal ingredients are prepared over an open flame.
Nature as Venue: Farms, forests, and coastlines serve as living dining rooms.
Intentional Gatherings: Every seat has a purpose; every meal tells a story.
Immersion: Guests engage with the process, tasting the alchemy of smoke, salt, and flame.
It's equal parts culinary exploration and human connection—an invitation to slow down, eat well, and remember what it feels like to be present.
